Mexican Cornbread

This is a great recipe to make for your family or to take to a "covered dish dinner". The amount listed here is for an 8-inch square glass baking dish, but this recipe is easily doubled for a 9X13 dish (I still use one pound of meat, just double everything else).


The onions & peppers are optional. I always leave them out & it still has plenty of flavor.

If you have leftovers, cover it & put it in the refrigerator. It still tastes great after reheating it in the microwave. Enjoy!
